Chicken Processing (part 2)

The new poultry processor we visited last week has been pretty impressive so far. They are located around Loganville, so it's about a 2-hour drive from our farm. Their facility is new, nice, and clean. The people were also kind and welcoming. It is such a relief to finally have a facility here in Georgia. Over the last several years we have used poultry processing facilities in Kentucky, North Carolina, On-Farm Processing, Kentucky (again), Alabama, and now finally Georgia. This is such an integral step of the process, that you need to be able to build a good working relationship with the processor. Georgia frowns on on-farm processing (for political reasons that I won't rehash here.) So for a pastured poultry operation to have a chance, there needs to be a custom processing option within a reasonable distance. Thankfully we now have that. I look forward to working with them, and you can look forward to even better availability of fresh pasture-raised chicken.
