Kitchen Experiments

I'm no ace in the kitchen. However, I can get by. Mostly I like to experiment and learn to make things that catch my eye. Sometimes it's a one-off, sometimes it turns into something that I make relatively often. Julie and I both have a fondness for preserving the summer harvest. We can tomatoes, beans, peas, and corn for use all year. We usually make jelly for the year from the wild blackberry crop. This week I wanted to try something different. We had some leftover peaches from our friends at Beech Creek Orchards. Evidently, I had a sweet-tooth in that moment, so I did a quick Pinterest search for peach pie filling. The result was a wonderfully delicious peach pie filling that can obviously be used for a pie, but also an ice-cream topping, crumb bars, cake topping, tarts, or danish. So far the hand pies I made with this filling are a hit. I think I'll work it into some homemade peach ice cream next. This little experiment is a keeper. It's also a reminder. Some things in life have a short season. It's important to enjoy them in the moment, and when possible, preserve some for later enjoyment.
